12 Days of Christmas Recipes: Day 3

Hello everyone

A quiet day today, very cold and frosty. We walked the dog this morning and had fabulous views of the snowy peaks of the Pyrénées in the distance. Such a treat! The views never cease to amaze me. We are very lucky.

The recipe today is the delicious and very easy vegan nut roast we had for our Christmas Day meal. We finished the last slices today – it is even tastier after a couple of days and good cold too with chutney. The recipe is courtesy of Vegan on Board (www.veganonboard.com).

Vegan Nut Roast

Prep time: 15 mins. Cooking time: 30-40 mins. Serves 4 (with leftovers)

Ingredients:

220g mixed nuts – we use walnuts, cashews, almonds and hazelnuts

1 onion, diced

2 cloves of garlic, finely chopped

2 tbsp olive oil

100g breadcrumbs

2 tbsp soy sauce

2 tsp dried herbs – we used thyme and oregano, but mixed herbs are fine or your preferred mixture

240ml vegetable stock

1 tbsp chia seeds

2 tbsp dried cranberries, chopped

Method:

1: Preheat the oven to 180°C / 360°F.

2: In a frying pan, gently heat the olive oil and cook the diced onion and garlic, until translucent and just starting to brown.

3: Using a food processor, pulse the nuts until fine.

4: Combine all the ingredients in a mixing bowl.

5: Transfer the nut mixture into a lined loaf tin (I used a 450g/1lb loaf size approx), and smooth the top with a spatula.

6: Bake the nut roast for 30-40 minutes until the top starts to brown.

7: Remove from the oven, and leave to cool in the tin for 10 minutes. To remove from the tin, place a board on top of the tin, flip over and peel off the baking paper.

8: To serve scatter the top with chopped walnuts and cranberries. Sprinkle a little chopped parsley around the plate.

Serving suggestion: roasted vegetables and red cabbage or salad

You could also add a few chestnuts to the recipe for a change.

This is one of the easiest nut roasts. We will be making it again and again I suspect! I hope you enjoy it – let me know.
