Walnut Damper Bread
Max and I both love making bread and discovered this really easy recipe, which adapts well to plant milk. The basic recipe is a mixture of flours and plant milk.
Ingredients
250g each self-raising flour and wholemeal self-raising flour
(you can make your own self-raising flour by adding 2 tsp baking powder to 150g plain flour and sifting well together)
60-100g chopped walnuts (depending on how nutty you want the bread)

Method
1: Preheat oven to 200°C/Gas 6
2: Put the flour in a bowl and add the walnuts, mixing thoroughly
3: Mix enough plant milk into the dried ingredients to give a sticky dough.
4: Knead on a lightly floured surface until smooth and shape into a round
5: Place the dough on a baking tray lined with greaseproof paper and press down so it is about 2.5cm thick.
6: Using a sharp knife mark into wedges, cutting about 1cm deep. You can sprinkle the dough with some walnuts pieces if you wish
7: Place in the oven and bake for about 30 minutes until golden brown. The loaf should sound hollow when you tap the underside with your fingers.
Enjoy with soup or at breakfast with marmalade.
Ideas: vary the flours you use (eg: use spelt instead of wholemeal), add herbs – rosemary works well with walnuts, curry powder, spices, dried fruit, etc. For non-vegans add bacon lardons and oregano for a delicious bread to eat with cheese.
