12 Days of Christmas Recipes: Day 7
Apple Cheese This doesn’t sound vegan, although it is, and to be honest we eat this with cheese, but it is also delicious with bread or vegan burgers. It is like Quince Cheese or Membrillo but unsurprisingly made with apples! It takes a bit of time and effort but is definitely worth it. It also makes a great gift. Add cinnamon for a delicious spread for toast. Perfect for a chilly winter’s day. Ingredients: 2kg Apples Granulated Sugar Water Cinnamon (optional) Method: 1: Quarter the apples without peeling or coring 2: Put in a saucepan with a small amount of water and simmer until the apple is soft – about…

12 Days of Christmas Recipes: Day 6
Hello everyone After a couple of savoury suggestions, now for a full-on chocolatey delight. We make this sometimes for Sunday brunch. Cooking time: approx. 30 mins Ingredients: 1 rectangular sheet of ready rolled puff pastry (without butter for a vegan recipe) 75g Dark chocolate (70% is good but a lower cocoa content works too. NB check that there is no dairy content) 1 ½ tbsp. icing sugar, plus extra to dust 2 Clementines, peeled and segments halved A few dates, chopped…

12 Days of Christmas Recipes: Day 3
Hello everyone A quiet day today, very cold and frosty. We walked the dog this morning and had fabulous views of the snowy peaks of the Pyrénées in the distance. Such a treat! The views never cease to amaze me. We are very lucky. The recipe today is the delicious and very easy vegan nut roast we had for our Christmas Day meal. We finished the last slices today – it is even tastier after a couple of days and good cold too with chutney. The recipe is courtesy of Vegan on Board (www.veganonboard.com). Vegan Nut Roast Prep time: 15 mins. Cooking time: 30-40 mins. Serves 4 (with leftovers) Ingredients:…

12 Days of Christmas Recipes: Day 2
Happy Boxing Day I hope you have had a restful Boxing Day? It is very cold here today but it has been sunny, which is great. Another beautiful sky this evening – it is so lovely to stop and watch the changing colours as the sun sets and the sky darkens. Today I am sharing a very simple vegan mincemeat recipe from The Hungry Herbivores (www.thehungryherbivores.com) – quick and easy to make. I have adapted it a bit and make it in small batches, adding a different liqueur to each batch. Luxury Mincemeat Makes 2 small jars Preparation and cooking time: 20-25 minutes Ingredients: 1 large Bramley apple, peeled and…

12 Days of Christmas Recipes: Day 1
Merry Christmas to you all I hope you have all had a lovely Christmas Day – wherever you are. We caught up with family across the world via Zoom this morning. Always fun and it is lovely to actually be able to see people even if only online. Our Christmas celebrations have been different this year, we ate capon on Christmas Eve with a variety of roasted vegetables including sprouts, bread sauce and stuffing. Today we had a vegan Christmas meal – za’atar spiced mushrooms and chestnuts on walnut bread, drizzled with walnut oil, followed by a really delicious (and very easy) nut and cranberry roast, which my son made,…

Cats, Capons and Christmas Trees
Happy Christmas Eve everyone – rather late in the day but hope you have had an enjoyable day? I have had a busy day, lots of cooking, but I am now relaxing after a lovely meal with a very nice glass of wine and finishing this post. We have gone a little French/European this year and enjoyed a celebratory meal this evening, with our capon, some roasted vegetables, my Grandmother’s bread sauce and stuffing. It felt wrong to follow all our usual traditions this year as so many people are not together, so we are doing things a little differently. It is particularly awful to hear of those who cannot…

Moss, mincemeat and mistletoe
Bonjour from the Tarn I hope you have all had a lovely week and your Christmas plans are taking shape? Is time going extra fast at the moment? The weeks seem to whizz by. We’ve had some beautiful sunrises and sunsets here this week – quite stunning and really makes me appreciate the beauty of nature, but also very inspiring. We have finally bought the Christmas tree and started putting up decorations and lights. Lots more for the kittens to play with, all very exciting for them. Every now and again they get tired and if I sit down with them, suddenly all 4 are on my lap purring away…

Proper Introductions
Bonjour. I hope everyone has had a great week? We have been enjoying walks with the dog a bit further afield this week, since the 1km lockdown rule was relaxed. (This restricted us to walking only within a km of the house for a maximum of one hour each day.) Bear has loved it too. Lockdown ends in France on 15th December, to be replaced with an 8pm to 6am curfew, apart from Christmas Eve. We have decided this is not the year to rush to be with family. Covid19 is still too prevalent and won’t be taking time off for Christmas I suspect. It has been so cold here…
